It is also during this season that I appreciate this simple salmon soup that has been my favorite for years. This recipe uses canned salmon and I have yet to experiment with using fresh. The simple clean flavor is a joy, especially for those who breakfast on Saturday after fasting the day before.
QUICK AND EASY SALMON SOUP
2 T butter or cooking oil
1 large onion, sliced thinly
4 medium tomatoes, sliced thinly
1/4 head of cabbage, sliced into thick strips
1 large can Bumblebee Salmon
3 cups fish stock or chicken stock
salt and pepper to taste
In a heavy bottomed sauce pan, sautee the onions and tomatoes in butter or oil until the onions soften and the tomatoes become pasty. Add the salmon (liquid included) and the stock and bring to a simmer. Add the cabbage, salt and pepper, and heat through. Serves 3-4.
